The first herd-book dates to 1885; two separate kinds of Highland – a smaller island type, typically black, and a larger mainland variety, typically golden – were registered as single breeds. It is primarily produced for beef and has been exported to many other countries. It is said that milk and meat in the Highlands are high in fat and can be used to lower cholesterol.
